In La Esperanza Farm, 80% of our coffee is handpicked by local people around the farm (mainly women), who carefully disinfect the harvesting baskets every day. Our coffee pickers select each berry meticulously, by observing the morphological, physiological, and biochemical conditions of its ripeness stage
During the harvesting process, we avoid dropping the berries on the soil and dirt since its critical to preserve the organoleptic and aseptic composition of the coffee.
The coffee berries that do fall down to the ground during the harvesting process are immediately put in different baskets in order to assure quality, and prevent defects in the coffee.
